  1. To make the teriyaki peanut sauce, combine all sauce ingredients in a bowl.
  2. Pan-fry tofu in a skillet.
  3. Soak fried tofu in peanut sauce and set aside.

  • 1 cup Water
  • 2 tbsp Cornflour, mixed with water

  • 1 Red Bell Pepper, Deseeded & cut fine
  • Handful Baby Corn, sliced down the middle
  • 1 Red Onion, sliced fine
  • 1 Carrot, sliced fine
  • 1 Courgette, sliced fine
  • 2 Baby Pak Choi

Instructions:

  1. Combine sauce ingredients in a saucepan without the cornstarch mix and reduce for about 5-6 minutes.
  2. Add in cornstarch slurry and bring to a boil. The sauce is done in a minute!
  3. Prepare your vegetables.
  4. Heat a wok and add the oil.
  5. Add the vegan chicken and sauce.
  6. Cook the vegan chicken for a minute or so then stir fry with the vegetables.

  • 4 ounces tofu (about a third of a 12 ounces package), sliced into 1-inch strips
  • 1/3 cup soy sauce (make sure to get gluten-free if you are avoiding gluten)
  • 1 clove garlic, chopped
  • 1/2 inch square of ginger, chopped
  • 1 teaspoon agave nectar
  • 1 teaspoon cornstarch

Instructions

Vegan Sushi:

  1. To make the filling, blend red pepper, mayo, and tofu in a food processor or blender until smooth.
  2. Roll sushi. At the base, lay a sheet of nori and spread rice on top of it. Add a spread of your red pepper mixture and top with avocado and cucumber.

  1. Combine your teriyaki sauce ingredients in a bowl and whisk until smooth. Cook tofu in marinade and slice thinly to use for sushi rolls.

Crispy baked tofu:

  1. Preheat the oven to 400° and line a baking sheet with parchment paper.
  2. Toss to coat the tofu in soy sauce, oil, cornstarch, and pepper in a medium bowl.
  3. Bake for about 30 minutes, turning halfway through until browned and crispy.

Teriyaki Sauce:

  1. Stir 1/4 cup of water, brown sugar, soy sauce, rice vinegar, sherry, sesame oil, garlic, and ginger together.
  2. In a saucepan, let the sauce simmer.
  3. Add cornstarch slurry and let the sauce thicken for a bit.
  4. Remove the pot from the heat.
  5. Coat tofu in teriyaki sauce after baking and serve with rice and steamed veggies.

  • 1 teaspoon orange zest (optional)
  • 2 teaspoons sesame oil
  • 1/2 teaspoon cracked black pepper
  • 2 teaspoons fresh grated ginger
  • 4 cloves garlic, grated
  • 1/2 tablespoon red pepper flakes
  • 1 1/2 teaspoons of arrowroot (mixed with 1/3 cup orange juice)
  • 3 tablespoons scallions

To Make the Cauliflower:

  • 1 cup almond milk
  • 1 cup gluten-free flour
  • Pepper to taste
  • 1 tablespoon olive oil
  • 1 head of cauliflower
  • 1 cup gluten-free bread crumbs
  • 2 tablespoons sesame seeds
  • 1 scallion sliced (garnish)

Instruction:

  1. Combine and heat sauce ingredients in a saucepan except for the arrowroot-orange juice mixture.
  2. Stir combination together and bring to a boil.
  3. Stir together the arrowroot and orange juice until it dissolves in a separate bowl.
  4. Slowly integrate juice into the boiling sauce, and continue to mix for 1 minute.
  5. Allow the mixture to simmer for 3-5 minutes in low-medium heat until sauce thickens.
  6. Remove from heat and cool before pouring into a jar.
  7. Preheat your oven to 450°F.
  8. Cut cauliflower into bite-sized pieces.
  9. Combine almond milk, flour, and optional oil in a large bowl.
  10. Coat cauliflower in batter and then sprinkle with bread crumbs.
  11. Bake for 15minutes and toss in teriyaki sauce.
  12. Top with sesame seeds and bake for another 5-10 minutes or until cauliflower is tender-crisp.
